A staple of Eastern European Jewish cooking, a “latke” is a potato pancake fried in oil, usually serve with sour cream and applesauce. The Yiddish word comes from Russian latka, “pastry”. The use of oil connects “latkes” with Hanukkah, when they are traditionally served.
