Titera’s Tidbit: Corned Beef
To corn beef is to soak a cut (usually a round or brisket) in salt brine in order to cure it. The “corned” part of the name has one of two origins: it may refer to the large grains (called corns in British English) of sea salt used in the brining solution, or it may refer to the grainy rind left on the cut’s surface.
